Cocktail Recipes

Absinthe can be enjoyed in many ways. Here at Third Stage we like to keep it simple, and we share some of our favorite ways to enjoy absinthe below. We also encourage experimentation as Third Stage will add complexity to any great cocktail recipe. You can even mix it with your favorite soda or seltzer for a simple, yet refreshing way to drink absinthe. Tell us what you favorite is!

Absinthe Drip

Drip cold water over a slotted spoon and sugar cube into the absinthe. Watch the absinthe “louche” as the essential oils are released and turn it cloudy.

  • 1.5 oz Third Stage Absinthe

  • 1 sugar cube (optional)

  • 2-3 parts water

Death Valley

Drink about 2 oz of your Topo Chico and add the following:

  • 1.5 oz Third Stage Absinthe

  • Fresh squeezed lime juice

  • Stir and drink!

Third Stage Sour

A name that says it all. This drink is tart and extremely refreshing.

  • 1.5 oz Third Stage Absinthe

  • 1 oz lemon juice

  • .75 oz simple syrup

  • 1 oz soda water

Nashville Sazerac

Build first three ingredients in a cocktail shaker with ice. Shake and strain into glass rinsed with Third Stage Absinthe. Garnish with lemon twist.

  • 2 oz Nashville Craft Bourbon

  • 1/3 oz anise syrup

  • 3 dashes Paychaud’s bitters

  • Rinse glass with Third Stage Absinthe

Absinthe Frappe

A classic since the 1800s, this cocktail has withstood the test of time for good reason.

  • 1.5 oz Third Stage Absinthe

  • .5 oz Simple Syrup

  • 2 oz Club Soda

  • 6 - 8 mint leaves (muddled)

  • Lemon wedge garnish (optional)

Death in the Afternoon

A favorite of Ernest Hemingway. Add a splash of orange juice to make it a “Death in the Morning”.

  • 1.5 oz Third Stage Absinthe

  • 4 oz Champagne

Absinthe Sorbet

Mix all ingredients in an ice cream maker. Developed by @pauleatseverything

  • 450 g of fresh strawberries

  • 3/4 cup of sugar

  • 5 fresh basil leaves

  • 3 tbsp of Third Stage Absinthe

  • 1 freshly squeezed lemon

Third Stage Mule

Think Moscow mule, but greener.

  • 1.5 oz Third Stage Absinthe

  • 4 oz Ginger Beer

  • .5 oz lime juice

  • Lime (garnish)

OrANGE pOPPY

Citrusy and slightly sweet. A great absinthe drink for all hours of the day and night.

  • 1 oz Third Stage Absinthe

  • .5 oz Triple Sec

  • 2 oz lemon lime soda

  • Splash of fresh squeezed OJ

  • Garnish with orange slices and mint
